Ingredients
(Serves 4)
- 1.5 lbs (700g) boneless chicken thighs, cubed
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 thumb-sized ginger knob, grated
- 2 tbsp curry powder
- 1 tbsp ground coriander
- 1 tsp turmeric
- 1 tsp cumin seeds (optional)
- 1 can (13.5 oz/400ml) coconut milk
- 1 can (14.5 oz/400g) diced tomatoes
- 1 cup (240ml) chicken stock
- 2 green chilies, thinly sliced (adjust for heat)
- 2 tbsp tomato paste
- 1 tsp sugar
- Salt to taste
- Fresh cilantro, chopped (for garnish)
- Cooked basmati rice or naan (for serving)
Instructions
- Heat oil in a large deep skillet or pot over medium-high heat. Add chicken and brown lightly on all sides (5-7 minutes). Remove and set aside.
- In the same pot, sauté onions until golden (5 minutes). Add garlic, ginger, cumin seeds (if using), and green chilies. Cook for 2 minutes until fragrant.
- Stir in curry powder, coriander, and turmeric. Toast spices for 1 minute to unlock their flavor.
- Return chicken to the pot. Add tomato paste and sugar, coating everything evenly.
- Pour in diced tomatoes, coconut milk, and chicken stock. Stir well, then bring to a simmer.
- Reduce heat to low, cover, and cook for 20-25 minutes, or until chicken is tender and cooked through. Stir occasionally.
- Taste and adjust salt or spice level. If the curry thickens too much, add a splash of water.
- Garnish with fresh cilantro before serving.
Tips & Variations
- Protein swap: Use shrimp (cook 5-7 minutes) or tofu for a vegetarian twist.
- Extra heat: Add ½ tsp chili flakes with the spices or include the seeds from the green chilies.
- Creamier texture: Stir in 2 tbsp coconut cream at the end.
- Vegetable boost: Toss in 2 cups of peas, spinach, or diced sweet potatoes during the last 10 minutes of cooking.
- Make ahead: Flavors deepen overnight—reheat gently with a bit of stock.
Serving Suggestion
Ladle this vibrant curry over fluffy basmati rice or alongside warm naan bread. A dollop of yogurt or a squeeze of lime adds brightness, while toasted almonds offer crunch. It’s a colorful, one-pan wonder that’ll become a staple in your kitchen!
