Homemade Margherita Pizza

There’s something magical about a classic Margherita pizza straight from your oven. Originating in Naples in 1889, this iconic pie celebrates simplicity with its tricolor presentation—red tomatoes, white mozzarella, and green basil—honorng the Italian flag. Making it at home is easier than you think, yielding a fresher, more flavorful result than takeout. Plus, the aroma filling your kitchen is worth every step.

Ingredients

Dough (for 2 thin crust pizzas):

  • 3 ½ cups (450g) all-purpose or '00' flour
  • 1 ½ cups (350ml) warm water (110°F/45°C)
  • 2 ¼ tsp (7g) active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil

Sauce & Toppings:

  • 1 can (14 oz/400g) crushed tomatoes
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • Fresh basil leaves (10–12)
  • 8 oz (225g) fresh mozzarella, sliced
  • 2 tbsp olive oil
  • Pinch of red pepper flakes (optional)

Instructions

  1. Make the dough: Dissolve yeast and sugar in warm water; let sit for 5 minutes until frothy. In a large bowl, mix flour and salt. Add yeast mixture and olive oil. Stir until a shaggy dough forms. Knead on a floured surface for 8–10 minutes until smooth and elastic. Place in an oiled bowl, cover with a damp towel, and let rise in a warm place for 1–2 hours, or until doubled.
  2. Prepare sauce: While dough rises, combine crushed tomatoes, minced garlic, oregano, salt, and red pepper flakes (if using). Set aside.
  3. Shape dough: Punch down risen dough. Divide into two balls. On a floured surface, stretch one ball into a 12-inch (30cm) round using your hands or a rolling pin (avoid a thick crust). Transfer to a parchment-lined baking sheet or pizza stone.
  4. Assemble pizza: Spread ½ cup tomato sauce over dough, leaving a ½-inch border. Arrange mozzarella slices evenly. Drizzle 1 tsp olive oil over the top. Repeat with remaining dough and ingredients.
  5. Bake: Preheat oven to 475°F (250°C) with a baking stone or inverted baking sheet inside (if using). Slide parchment with pizza onto stone. Bake for 12–15 minutes until crust is puffy and golden, and cheese bubbles.
  6. Finish: Remove pizza. Top with fresh basil leaves immediately. Slice and serve hot.

Tips & Variations

  • Dough shortcut: Use store-bought pizza dough for a quicker option.
  • Texture tip: For crispier crust, prebake dough 3 minutes before adding toppings.
  • Cheese swap: Try buffalo mozzarella for extra creaminess, or add a sprinkle of shredded provolone.
  • Flavor boost: Grill fresh basil with the pizza for a smoky note, or drizzle balsamic reduction after baking.
  • Vegan option: Use vegan mozzarella and olive oil instead of dairy.
